  • 2 teaspoons olive oil
  • 2/3 cup bell pepper, diced
  • 2/3 cup celery, diced
  • 2/3 cup cremini mushrooms, thinly sliced
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup pine nuts, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • Dash of cayenne
  • 1 15-ounce can black beans, drained and rinsed
  • 1/4 cup organic maple syrup
  • 1/2 cup panko crumbs
  • 1 egg
  • 1 cup black sweet rice, cooked
  1. Heat olive oil in a large skillet over medium heat. Add bell pepper, celery, mushrooms, onion, garlic, pine nuts, cumin, paprika, salt, pepper and cayenne and cook, stirring frequently, until softened, about 5 minutes.
  2. Put beans in a large bowl and mash well with a fork. Add maple syrup, panko crumbs, egg, and rice. Mix in the sautéed vegetables and stir to combine. Form into 6 patties.

  3. Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange patties in a single layer (working in batches, if needed) and cook, flipping once, until golden brown on both sides and cooked through, about 10 minutes. Grill the buns and place a patty on each bun, top with your favorite toppings.
