Ingredients
  • 6 egg whites
  • 1/4 cup tomato diced
  • 1/4 cup zucchini diced
  • 1/4 cup mushrooms diced
  • 2 tablespoons onion divided
  • 2 tablespoons chives chopped
  • 1 cup spinach wilted
  • 2 tablespoons butter
  • 2 tablespoons Parmesan cheese grated
  • 2 slices tomato
  • 2 thin slices zucchini
Instructions
  1. Beat the egg whites in a medium bowl. Gently fold in the tomatoes, zucchini, mushrooms, onion, chives, and spinach.
  2. Melt the butter in a skillet and add the egg mixture. Continue to stir until the egg is partially set.
  3. When frittata begins to hold together, sprinkle with the cheese and top with sliced tomato and zucchini.
  4. When set remove from heat and serve immediately.
