Avocado Bacon Oatmeal

  • 1 1/4 cup oats, old-fashioned type
  • 2 cups half & half
  • Salt and pepper, to taste
  • 3 slices Canadian bacon
  • 1 avocado, sliced
  • 6 cherry tomatoes, halved
  • Green onion
  1. In a small saucepan heat the half and half with the salt over medium-high heat. Bring to a boil.
  2. Stir in the oats.
  3. Reduce heat to medium. Cook for 5 minutes, stirring occasionally.
  4. Fry bacon in a skillet over medium-high heat until browned. Transfer to a paper plate until ready to use.
  5. Spray the skillet with cooking oil and reduce heat to medium. Add garlic and cook until soft and fragrant, about 1 minute.
  6. Dice the bacon into tiny bits and add to the oatmeal. Spoon in the garlic. Stir to blend.
  7. Divide the oatmeal between two serving bowls. Divide the avocado, cherry tomatoes, and green onion between the bowls. Serve immediately.
