I love Chinese fried rice and this is a quick home version made with carrots, peas, and a mix of soy sauce and sesame oil. I go a little heavy on the sesame oil and lighter on the soy sauce as that is my personal preference. That is why I homemade cooking so much. You can cater it to your tastes.
Cook 3 cups rice according to package instructions. In a skillet heat 1 – 2 tablespoons sesame oil over medium-high heat. I like to use a cast iron skillet which adds an almost caramelized texture. Sauté 2 medium diced carrots for 5 minutes. Stir in 1/2 cup frozen peas.
Stir in rice. Add soy sauce to taste stirring to coat. Drizzle in sesame oil according to taste and toss to incorporate all the flavors. Fry another 2 minutes.

- 3 cups white rice, cooked
- 2 medium carrots, diced
- 1/2 cup frozen green peas
- 2 tablespoons sesame oil
- Soy sauce to taste
- Sesame Oil to taste
Heat 2 tablespoons sesame oil in a skillet over medium-high heat. When hot add the carrots and saute for 5 minutes.
Add the green peas.
Stir in the rice. Add some soy sauce tossing to coat. Drizzle in some sesame oil and toss to incorporate through rice. Fry for an additional 5 minutes. Serve immediately.
