Mediterranean Chicken Salad

Today, I am sharing one of my favorite salads. A Meditteranean Chicken Salad that is loaded with delicious fresh vegetables, black olives, garbanzo beans, and feta cheese. I serve it with a lemon herb vinaigrette on the side. For added protein, serve it with sliced seared chicken that has been marinated and seared in a Mediterranean spiced lemon and oil marinade.

Gyro Burgers

I can still remember my first gyro a delightful dish of slowed cooked meat served with tzatziki sauce, tomatoes, and sliced onions on a warm pita. Not having any Greek restaurants close to me I wanted to come up with a dish that shared the same flavors and could be easily made at home.

For me, there is really no home substitute for the spooled meatloaf sliced fresh off the roll dripping in grease and flavor so I used ground meats and made a gyro burger instead. For an authentic taste, and the version I made for this post, use a blend of ground lamb and ground beef topped with a tzatziki sauce and a fresh dill salad served on a buttered and toasted brioche roll. I personally am not a fan of lamb so I normally use a blend of ground pork and ground beef.

Gyro Pizza

Just in time for Pizza Friday, my favorite college addiction. Close to campus there was a pizza place that offered unique pizza creations. One of the choices was Gyro pizza. It was the bomb, as we said back in the day. Sadly, as always happens, I had to grow up and leave college life behind. Gone were the days of sleeping until noon and parting until midnight. And gone was that Gyro pie.

I don’t’ miss the parting so much but, man do I miss that pizza. So much so that I created my version which uses Naan bread versus pizza crust which is closer to the pita bread used in a Gyro.

Make the Tzatziki sauce early and chill for at least two hours so the flavors have time to marry. Tzatziki sauce is very easy to make. Sprinkle one peeled and diced English cucumber with salt and press to drain out extra water. In a food processor pulse the cucumber, fresh lemon juice, minced garlic, fresh dill, and black pepper. I only use a small amount of lemon juice as lemon can become too strong quickly. Process until smooth. Add cucumber mixture one tablespoon at a time to 2 cups of Greek yogurt tasting often to get the right blend. I use Fage all-natural strained yogurt.

Layout 4 Stonefire Naan Breads on a baking sheet. Naan bread is great in this recipe because it is so close to pita bread but, it makes a great crust for almost all pizzas and no tossing dough in the air.
Spread the Tzatziki sauce over the bread.
Lay gyro meat over the sauce. I get my gyro from a great little butcher shop that takes custom orders and cuts meat to customers specifications. Hopefully, you can find a great butcher. If not, you should be able to find a gyro kit in most grocery stores but that does not do the meat justice. Instead, find a great gyro restaurant order an extra plate to take home. It’s a win, win: dinner out and makings for a great pizza.
Add onion slices, diced fresh tomatoes, and freshly ground pepper.
Sprinkle a mix of provolone and mozzarella cheese over the top.
In a preheated 425° oven bake the pizzas for 12 – 15 minutes.

Gyro Pizza

For Tzatziki Sauce
• 2 cups Greek yogurt
• 1 – 2 tablespoons freshly squeezed lemon juice
• 1 large English cucumber, diced
• 1 tablespoon salt
• ¼ cup chopped fresh dill
• Freshly ground pepper
For the Pizza
• 2 packages of Stonefire Naan Bread
• Tzatziki Sauce
• 2 medium tomatoes, diced
• 1 small onion, sliced
• 1 cup provolone/mozzarella cheese, shredded (more if you like it cheesy)


  1. Peel cucumber and dice. Put in a colander and sprinkle with salt to draw out water. Cover with a plate, sit something heavy on top. Let sit for 30 minutes. Drain well and wipe dry with a paper towel.
  2. In a food processor, add cucumbers, garlic, lemon juice, dill, and pepper. Pulse until smooth. Add cucumber to yogurt one tablespoon at a time tasting often until you get the right mix for your taste. Place in refrigerator for at least two hours for flavors to blend.
  3. Preheat oven to 425°.
  4. Lay Naan bread out on baking sheets. Spread Tzatziki sauce over bread. Add gyro meat, sliced onion, and diced tomatoes. Sprinkle cheeses over the top.
  5. Bake for 12 – 15 minutes.
