Six On-the-Go Breakfasts

I don’t know about you, but here mornings can get a bit hectic. No matter how much I prepare the night before with packed backpacks and briefcases, shoes aligned at the door, and clothes laid out something always derails me and I am rushing around trying to beat the clock. To counter this I have a handful of breakfast go-to options that are easy, healthy and most importantly quick!

1. Avocado & Egg Toast

Mash 1 avocado and season with my Smoked Salt Seasoning. Fry one egg over medium heat until cooked to your desired doneness. Toast a piece of whole wheat bread, spread with avocado, top with the fried egg, and season with red pepper flakes.

2. Blueberry Coconut Yogurt:

Stir 1/4 fresh blueberries, 2 – 3 tablespoons toasted coconut, and 1 cup vanilla yogurt. I like to keep a batch of toasted coconut to have on hand. Just spread 1/2 bag organic coconut on a baking sheet and bake at 325°F for 5 to 10 minutes, stirring occasionally. Store in an airtight jar.

3. Cottage Cheese and Fruit:

You can top cottage cheese with just about any fruit you have on hand. Two of my favorites are fresh pineapple and caramel baked peaches. I slice 1 – 2 white flesh peaches and place them in a single file in a baking dish. Brush lightly with melted butter and set aside. In a small microwave safe bowl add 1/2 cup Kraft caramel bits and 1 tablespoon heavy cream and microwave for 1 – 2 minutes stirring after every 30 seconds until melted. Drizzle half of the sauce over the peaches and bake at 375°F for 5 – 10 minutes. Peaches should be soft but not mushy. Spoon over cottage cheese add a few candied pecans and drizzle with the reserved caramel.

4. Ricotta Toast:

One of my favorites since high school is ricotta toast there are so many ways to make ricotta toast. Really no way to go wrong with this one. See my earlier posts on all the ways I enjoy ricotta toast here.

5. Granola

I try to always keep homemade granola on hand. I use it as a cereal topped with fresh fruit, put it onto of my yogurt, and when in a time crunch toss it back dry out of a cup. Make this Peanut Butter & Banana Granola on the weekend and have it all week to enjoy.

    Of course, my on the go-to’s are the more savory selections. Avocado and egg toast . . my heart. And ricotta toast . . whoa! You’ve successfully created the culinary equivalent of a lover’s triangle for me!
