This morning I was greeted with several inches of snow outside my bedroom window. With layers of fluffy white snow perched precariously on tree limbs, blanketing the pines, and drifting romantically through the gentle morning breeze all I could do was smile. Which is not something this warm weather gal does when snow is involved.
Snow Day! Time to think of ways to warm our souls. A delicious bowl of grains, sautéed winter veggies, and poached eggs mixed in a delicate white garlic sauce is what this day calls for. Packed with protein, it promises to boost brain power for a day of board games.
How many cookie recipes do you think are out there? A hundred? A hundred thousand? And still, the only cookie that has my heart is the original chocolate chip cookie. Want extra height and near perfect shape? The secret is to use real sweet cream butter, quality chocolate chips, and eliminate the baking soda. Use only baking powder.
I have always liked mushrooms. I am not really sure why considering they are fleshy growths of fungus. 😱 Wild mushrooms grow abundantly in the fields and forests of Illinois. In fact, there are said to be more than 1,200 different species in the Chicago region. In my yard alone, there are several edible species. The golden-brown honey mushroom grows on the roots of my oaks. I have friends who come every year to pick them.
Lunches can be a bit stressful for me. I have a bad habit of working through lunch often forgetting about it and looking up at 3 PM to find it is too late to go. So, I’ll grab a bag of nuts, or whatever I have stashed in my desk, promising myself that I will have a good dinner when I get home. The problem is by the time I get home I am starving, and that bag of chips is much quicker than preparing a full meal.
One of my goals for this year is to stop skipping meals which is why I love Buddha Bowls. The protein and nutrients are built right in giving me the boost I need to finish up my day. I can make them in advance and bring them along. I do not have to overthink them. Just pull together any variety of vegetables, grains, legumes, nuts, and seeds. They’re also so pretty. I was strolling through the farmers market drooling over all the fresh winter squash on display when inspiration struck. I wanted to make a veggie lasagna using butternut squash and zucchini with my fresh spinach lasagna noodles. And since fresh was on my mind I grabbed some leeks, onions, and garlic for the lasagna red sauce that compliments all the fresh healthy veggies in this recipe.
