Mediterranean Grilled Chicken

Savory, juicy, tender chicken seared in lemon oil.

My favorite thing about Mediterranean dishes are they are ridiculously easy to make yet packed with so much flavor. Take this Mediterranean Grilled Chicken, for example, organic chicken breasts marinated in olive oil, lemon juice, and a blend of Mediterranean spices. Grills up in 15 minutes. All the flavor comes from the spices as is the idiosyncrasy of a lot of Mediterranean cooking.

~ Mixing up the marinade

The marinade could not be simpler. In a small bowl mix 3 tablespoons fresh lemon juice and 3 tablespoons olive oil with 1/4 cup mix of Mediterranean spices. I simplify the process by using Cedar Oak Farms Mediterranean Rub which is filled with eleven classic Mediterranean spices including dried tomato flakes that adds that extra burst of intense flavor.

~Prep the chicken

Place 4 boneless skinless chicken breasts in a baking dish. Pierce the chicken several times with a fork creating wonderful pocket holes to fill with flavor. Spread the marinade over the chicken and cover with plastic wrap. Let marinade in the refrigerator for 30 minutes.

~ Grilling the goodness

I prefer to grill the chicken to ensure it stays juicy and does not dry out in the oven. Heat 2 tablespoons of butter in grilling pan. Add the chicken breast and a few slices of lemon to the pan and grill over medium-high heat for 5 – 6 minutes per side, or until the chicken is cooked through.

Serve it up. Simple, right?

Ingredients
  • 4 boneless skinless chicken breasts
  • 3 tablespoons lemon juice
  • 3 tablespoon olive oil
  • 1/4 cup Mediterranean spices parsley, garlic, oregano, etc., I used COFarms Mediterranean Rub
Instructions
  1. Combine the lemon juice, olive oil, and spices in a small bowl.
  2. Place the chicken in a baking dish. Pierce the chicken with a fork several times and spread with the marinade. Cover with plastic wrap and place in the refrigerator for 30 minutes.
  3. Heat 2 tablespoons of butter in a grilling pan and add the chicken with a few lemon slices. Grill for 5 – 6 minutes per side, or until cooked through.
