Louisiana is the one place where you can count on true Cajun and Creole food never straying far away from its roots.  This is true southern cooking at its best. Of course, the rich history and culture of New Orleans is legendary, but it is not the only city hosting a great food Scene. Huntsville is poised to become a front-runner.
