Chop Salad

Ready for this week’s salad – a bowl full of overflowing veggies. No meat but packed with protein and hearty goodness. Named the Chop Salad because you will be doing a lot of chopping.

Chop 1

What you need:
Purple onion
Garbanzo beans
Black olives
Feta Cheese
Yellow Pepper
Fresh basil

Place the arugula in a bowl. Working around the salad arranging in wedges layer1/2 cup of each of the following: garbanzo beans, purple onions, yellow pepper, tomatoes, feta cheese, black olives, and cucumbers. Slice a hard-boiled egg and swirl it in the center.
