How much of our eating is physiological? Take a burger, for example, I can be going along living a nice vegetarian life when bang it hits me. That craving for a thick, juice running down my arms, must have, howling at the moon, urge that takes a hold of me and will not let go.
I don’t often have cravings. I can talk myself into thinking I need something: like that bag of chips on the end rack of my grocery aisle. But I don’t crave chips, steak, pizza, chocolate, etc. But every now and again I get a hankering for a burger that takes over my soul and leads me to the dark side of a pickup window ordering a double, double, animal style!
So, I have devised a plan to trick my brain into thinking I am cheating. This black bean burger loaded with muenster cheese, mixed greens, tomatoes, red onions, ketchup & roasted garlic aioli on a toasted onion bun can challenge any burger, anywhere.
Make the Rice:
In a medium saucepan bring 2¼ cups water to a boil. Stir in 8 ounces of black sweet rice. Cover with a tight-fitting lid. Reduce heat to a simmer and cook for 10 minutes. Remove from heat and set aside until ready to use.
Wash and Prep the Veggies:
Dice 1 small pepper, whatever you have on hand. I used a green bell pepper. | Dice 1 stalk of celery | Slice 10 cremini mushrooms | Dice 1/2 & slice the other 1/2 of a red onion | Mince 2 garlic cloves.
Make the Burgers:
Heat 2 teaspoons olive oil in a large skillet over medium heat. Add the prepped veggies (only use the diced onion. Save the sliced for the burger garnishment), 1/4 cup pine nuts, 1 teaspoon cumin, 1 teaspoon smoked paprika, 1/2 teaspoon fine sea salt, 1/4 teaspoon pepper and a dash of cayenne. Sauté, stirring frequently, until softened, about 5 minutes.
Rinse and drain a 15 ounce can of black beans and place in a large bowl. Mash beans well with a fork. Add 1/4 cup maple syrup, 1/2 cup panko crumbs, and 1egg. Fluff the rice with a fork and add to the bean mixture. Mix in the sautéed vegetables and stir to combine. Form into 6 patties.
Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange patties in a single layer (working in batches, if needed) and cook, flipping once, until golden brown on both sides and cooked through, about 10 minutes.
Assemble the Burgers:
Here is where the trickery begins. The assembling of these burgers is so beautiful and filled with such yum that your brain is fooled into thinking it has gotten away with something.
Warm a griddle on the stove and toast the buns to a golden brown. We are going to work from the bottom up to assemble the burger.
Spread ketchup over the bottom bun, place a burger on bun, add a slice of muenster cheese, red onion slices, tomato slices, followed by mixed greens. Spread, no make that slather, the top bun with homemade roasted garlic aioli and place on top of the mixed greens. Repeat for all the burgers.

- 1/2 cup panko crumbs
- 1 egg
- 1 cup black sweet rice, cooked
Heat olive oil in a large skillet over medium heat. Add bell pepper, celery, mushrooms, onion, garlic, pine nuts, cumin, paprika, salt, pepper and cayenne and cook, stirring frequently, until softened, about 5 minutes.
Put beans in a large bowl and mash well with a fork. Add maple syrup, panko crumbs, egg, and rice. Mix in the sautéed vegetables and stir to combine. Form into 6 patties.
Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange patties in a single layer (working in batches, if needed) and cook, flipping once, until golden brown on both sides and cooked through, about 10 minutes. Grill the buns and place a patty on each bun, top with your favorite toppings.
