I’m going to do something that I don’t normally do. I’m going to take it easy on myself. Tonight’s recipe is made with all prepared ingredients and takes less than 10 minutes to throw together. The rest of the time, 25 minutes, is baking time. So, grab a glass of wine, put your feet up, and wait for the timer to go off.
Warning, this can be a bit on the spicy side. Therefore not suited for everyone. Take heart, I can eat it and I cannot take anything above mild. How is that? Because the blue cheese dressing and mozzarella cheese balance the heat taking it down to moderate.
SOAK THE CHICKEN:
Start with a natural rotisserie chicken which just means no added herbs or spices. A natural chicken takes to the red hot sauce the best. Remove skin from the chicken and cut or slice into bite-sized pieces. Transfer to a medium bowl. Pour in enough of your favorite red hot sauce to cover the chicken, approximately 1/4 cup. I used Cholula hot sauce. Add a dash of Worcestershire sauce and a pinch of cayenne pepper or Tabasco sauce. Let sit for 30 minutes to allow the chicken to absorb the sauce.
CHOOSE THE PIZZA DOUGH:
Do you have a favorite pizza place that has the best crust? Did you know you can buy that crust from them? I have a local pizzeria that sells the dough to me in a nice mound ready for hand spreading into a 16” round.
I start by sprinkling some corn flour and garlic salt onto a pizza pan for flavor and to keep the dough from sticking to the pan.
Then, I lightly flour the dough and use my knuckles and palms to spread the dough out. Pinch the edges to create a nice rim.
ASSEMBLE THE PIZZA:
Spread about 1 – 2 cups of blue cheese dressing over the dough. Use more or less depending on your taste. I love blue cheese and tend to go heavy with it. The blue cheese also helps to counter the heat in the buffalo sauce to a level that I can handle. Spread the chicken over the dressing.
Top with 1 to 2 cups of a finely shredded mozzarella cheese.
Bake in a 375°F oven for 25 minutes, or until the crust is a golden brown.

- 1 pizza crust dough, from your favorite pizzeria
- 2 cups naked (plain) rotisserie chicken, sliced into bite-sized pieces
- 1/4 cup of your favorite hot sauce, like Franks or Cholula
- Dash of Worcestershire sauce
- Pinch of cayenne pepper
- 1½ cups blue cheese dressing
- 1 - 2 cups mozzarella cheese, finely shredded
Mix the chicken, hot sauce, Worcestershire sauce, and cayenne pepper in a medium bowl. Let sit for 30 minutes giving the chicken time to absorb the sauce.
Preheat the oven to 375°F.
Lightly flour the pizza dough and using your knuckles and palms spread the dough into a 16” round.
Sprinkle a 16” pizza pan with corn flour and garlic salt lightly covering the bottom.
Transfer the dough to the pan. Spread 1½ cups blue cheese dressing over the dough.
Spread the chicken over the dressing.
Top with mozzarella cheese.
Bake for 25 minutes, or until the crust is a golden brown.
