How many cookie recipes do you think are out there? A hundred? A hundred thousand? And still, the only cookie that has my heart is the original chocolate chip cookie. Want extra height and near perfect shape? The secret is to use real sweet cream butter, quality chocolate chips, and eliminate the baking soda. Use only baking powder.
When it comes to baking always mix the dry and wet ingredients separately. Start by mixing 2¼ cups flour, 2 teaspoons baking powder, and 1/2 teaspoon salt. Set aside.
In a large bowl cream 2 sticks of softened butter with 3/4 cups granulated sugar and 3/4 cup packed brown sugar. Using a hand mixer set on medium speed mix until creamy. Add 1 teaspoon vanilla and 2 eggs. Continue mixing on low until blended.
Stir in a bag of chocolate chips by hand until well incorporated. Use your favorite chocolate. I like to use milk chocolate and prefer a large chip. I am addicted to Ghirardelli Chocolate premium baking chip. It is a larger chip and when you bite into it you come away with a gooey chunk of delicious.
For uniformed cookies use a small scoop and drop 12 mounds of batter onto an ungreased cookie sheet. For a larger cookie use an ice cream scoop and bake 6 scoops on each sheet. Bake for 11 – 15 minutes, depending on the size of scoop you use, until golden brown.
Go ahead and keep coming up with new cookie recipes, but do not be offended if I keep returning to the one I love. Cookies are seriously the only baking I do with any consistency and deliciousness. – Ella💙
- 2¼ cups unshifted flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 1 teaspoon pure vanilla
- 2 eggs
- 1 bag chocolate chips
Preheat oven to 375°.
In a medium bowl stir the flour, baking powder, and salt blending well.
In a large bowl cream, the butter with the sugars at medium speed. Add vanilla and eggs. Mix on low speed.
Gradually add the flour mixture into the butter mixture mixing until well blended. Stir in the chocolate chips by hand.
Using a large cookie scoop drop the batter onto ungreased cookie sheet.
Bake for 11 minutes or until golden brown.
