Vegetable Fried Rice

I love Chinese fried rice and this is a quick home version made with carrots, peas, and a mix of soy sauce and sesame oil. I go a little heavy on the sesame oil and lighter on the soy sauce as that is my personal preference. That is why I homemade cooking so much. You can cater it to your tastes.

Cook 3 cups rice according to package instructions. In a skillet heat 1 – 2 tablespoons sesame oil over medium-high heat. I like to use a cast iron skillet which adds an almost caramelized texture. Sauté 2 medium diced carrots for 5 minutes. Stir in 1/2 cup frozen peas.

You will love the simplicity of this dish. Serve it as a side to all your favorite Asian dishes. It is especially good with General Tso’s Cauliflower Stir-Fry. – Ella💙

    1. Thank you! I am going meatless in January and this is just one of many to follow. I am so glad it appears to someone who lives the lifestyle of a Vegan. 🙏

    1. It does! So quick and easy and you get to control the the flavor when adding soy sauce or sesame oil. I love sesame oil so I go a bit heavier with it.
