Vegetable Fried Rice

I love Chinese fried rice and this is a quick home version made with carrots, peas, and a mix of soy sauce and sesame oil. I go a little heavy on the sesame oil and lighter on the soy sauce.

Cook 3 cups rice according to package instructions. In a skillet heat 1 – 2 tablespoons sesame oil over medium-high heat. I like to use a cast iron skillet which adds an almost caramelized texture. Sauté 2 medium diced carrots for 5 minutes. Stir in 1/2 cup frozen peas.

Stir in rice. Add soy sauce to taste stirring to coat. Drizzle in sesame oil according to taste and toss to incorporate all the flavors. Fry another 2 minutes.

Ingredients
  • 3 cups white rice, cooked
  • 2 medium carrots, diced
  • 1/2 cup frozen green peas
  • 2 tablespoons sesame oil
  • Soy sauce to taste
  • Sesame Oil to taste
Instructions
  1. Heat 2 tablespoons sesame oil in a skillet over medium-high heat. When hot add the carrots and saute for 5 minutes.

  2. Add the green peas.

  3. Stir in the rice. Add some soy sauce tossing to coat. Drizzle in some sesame oil and toss to incorporate through rice. Fry for an additional 5 minutes. Serve immediately.
