Oatmeal is normally given a sweet twist with the addition of fruit, nuts, maple syrup, and cinnamon sugar, but I like to play the rebel. Also, I am not a sweet person…as in I do not like desserts or pastry…not unkind. I started to think of grits which are often served like oatmeal but is also served with salt and pepper or other savory spices. How could I interpret that into oatmeal? How about a tasty bowl of oatmeal made with bacon and garlic served with avocado, tomatoes, and green onion. Intrigued or hesitant?
I was both. I was curious for sure, but when it came time to taste the oatmeal, I was more than hesitant. I was, in fact, a chicken. I made my hubby try it first. When he gave it the thumbs up, I went in slowly because, honestly I love the man, but he will eat anything! I was surprised at how well this worked. You have to give it a try.
Start with making the oatmeal. In a small saucepan heat 2 cups of half and half with salt and pepper to taste over medium-high heat. Bring to a boil. Stir in 1 1/4 cups old-fashioned oats. Reduce heat to medium and cook for 5 minutes, stirring occasionally.
Do not substitute the half and half. This gives the oats that nice creamy texture.
Meanwhile, fry 2 – 3 slices of Canadian bacon in a skillet over medium-high heat. When browned remove from heat and let cool on a paper plate.
Reduce heat to medium. Spray skillet with cooking oil. Add 1 clove of minced garlic and cook until soft and fragrant, about 1 minute. When the oatmeal is done cooking, thinly dice the bacon and add to the oatmeal. Spoon in the garlic. Cover and keep warm.
Divide the oatmeal between two serving bowls. Add 1/2 sliced avocado, 3 cherry tomatoes halves, and about a tablespoon of sliced green onion to the top of each bowl. Serve immediately.

- 2 cups half & half
- Salt and pepper, to taste
- 3 slices Canadian bacon
- 1 avocado, sliced
- 6 cherry tomatoes, halved
- Green onion
In a small saucepan heat the half and half with the salt over medium-high heat. Bring to a boil.
Stir in the oats.
Reduce heat to medium. Cook for 5 minutes, stirring occasionally.
Fry bacon in a skillet over medium-high heat until browned. Transfer to a paper plate until ready to use.
Spray the skillet with cooking oil and reduce heat to medium. Add garlic and cook until soft and fragrant, about 1 minute.
Dice the bacon into tiny bits and add to the oatmeal. Spoon in the garlic. Stir to blend.
Divide the oatmeal between two serving bowls. Divide the avocado, cherry tomatoes, and green onion between the bowls. Serve immediately.
