One week until Christmas?! How did that happen? I still need to finish my shopping. I have several started, but not finished, handmade gifts. Time! I need more of it. On these busy nights, I turn to salads. One of my favorites is an orange chicken salad filled with easy to find winter produce.
To make the vinaigrette dressing: Mix together 4 tablespoons white wine vinegar, 1 minced shallot, 6 tablespoons extra virgin olive oil, and salt and pepper to taste. Set aside until ready to use.
Wash and pat dry 2 boneless, skinless chicken breast. Split each breast, cutting across and through the sides, into two pieces. Heat 2 tablespoons and 1 pat of butter in a grilling pan.
When heated arrange the chicken in the pan. Slice 1 orange and lay the slices over the chicken. Turn chicken halfway through cooking time placing fresh orange slices on chicken. Remove from heat. Set aside until ready to use.
Remove the outer dark leaves from a head of escarole. Tear the inner pale leaves into bite-sized pieces. Place in a lettuce spinner rising the greens with cold water. Spin and transfer to a large salad bowl.
Tear a head of endive into bite-sized pieces. Place in a lettuce spinner rising the greens with cold water. Spin and transfer to the salad bowl.
Cut a head of radicchio into half and remove the core. Slice into thin ribbons. Place in a lettuce spinner rising the greens with cold water. Spin and transfer to the salad bowl.
Rinse and pat dry a handful of flat-leaf Italian parsley. Roughly chop and add to salad bowl.
Peel, section, and cut into thirds 2 – 3 oranges. The oranges not only add a nice citrus taste but will reduce any bitterness in the greens.
Toss the salad ingredients together with the vinaigrette using salad tongs, or your hands. There is no shame in using the fingers to help massage the dressing into the leaves. Layout a serving of salad on an individual serving plate. Cut one of the chicken breasts into slices and lay over the greens. Makes 4 servings in total.
