I’m sorry y’all, I’m going to have to say the M word that no one likes, but when it comes to orange muffins, I want them to be Moist. This sweet muffin delivers and then some. In fact, it is so good you might be tempted to serve it for dessert. I love serving them on Christmas morning for brunch and later in the day as a snack.
So, what’s the trick to a really moist muffin? Do not overwork the batter. As simple, and as hard, as that. That is why it is important to mix the dry and moist separate before putting them together. Once you put them together you only want to stir until the dry ingredients are moistened.
In a large mixing bowl combine 1 cup flour, 1/4 cup brown sugar, and 1 1/2 teaspoon baking powder. Now make a well in the center for the moist ingredients.
In a separate bowl, mix together 1 large egg, 1/2 cup freshly squeezed orange juice (about 2 – 3 oranges), 1 teaspoon orange zest, 1/4 cup coconut oil, and 1/2 teaspoon pure vanilla extract.
Pure vanilla extract is made from the vanilla bean pod and is the purest form of the vanilla flavoring. When it comes to flavor and aroma opt for the pure vs. imitation always! Now pour into the flour well and stir just until moistened.
Note: You can use purchased orange juice, but I really love everything as natural as possible.
Lightly spray a muffin tin with cooking spray. Spoon in the batter filling the cups to about two-thirds full. Bake at 400°F for 8 minutes.
Meanwhile, mix 1/4 cup sugar, 1 1/2 tablespoons flour, 1/2 teaspoon ground cinnamon, and 1 1/2 tablespoons butter using a pastry cutter to cut in the butter. When muffins are done remove from the oven and sprinkle with topping.
Return to oven for 6 minutes, or until edges of muffins are lightly browned.

- 1 large egg
- 1/2 cup orange juice
- 1 teaspoon orange zest
- 1/4 cup coconut oil, or vegetable
- 1/2 teaspoon pure vanilla extract
- Cooking spray
- 1/4 cup sugar
- 1 1/2 tablespoons flour
- 1/2 teaspoon ground cinnamon
- 1 1/2 tablespoons butter
Preheat the oven to 400°F.
In a large mixing bowl combine the flour, sugar, and baking powder; make a well in the center.
In a separate bowl, mix together the egg, orange juice, orange zest, oil, and vanilla.
Pour into the well in the flour mixture and stir just until moistened.
Spoon into a muffin tin coated with cooking spray. Fill muffin cups about two-thirds full.
Bake for 8 minutes.
Meanwhile, mix all the topping ingredients together using a pastry cutter to cut the butter into the other ingredients. When muffins are done sprinkle with topping and return to oven for 6 minutes, or until edges of muffins are lightly browned.
