Is it an appetizer or an Hors-d’oeuvre? That depends are how you are serving them. Appetizers represent the first course eaten when seated at the table. Hors-d’oeuvres literally translates to “outside of the work” and are bite-sized finger foods offered at parties and receptions served with cocktails. Either way, these delicious sweet potato rounds are just about perfect for Thanksgiving. Do all the prep ahead of time and place them under the broiler for 3 minutes right before serving. Easy!
Here are my three favorite ways to serve sweet potato rounds that include a savory, a cheesy, and a sweet version to cover everyone’s taste. Ummm…. and there is no shame in enjoying all three versions!
Start by preparing the rounds. Wash and slice 4 sweet potatoes. Lay on a rimmed baking pan in a single file. Brush with olive oil and sprinkle with TWS smoked salt seasoning. Pop in a 375°F. oven for 30 minutes, or until the potato is fork tender.
Cheesy Version: In a small bowl, combine 4 ounces of crumbled gorgonzola, 1/3 cup chopped pepitas, and 1/4 cup fresh chopped cranberries. Spoon over the prepared potato rounds. Broil for 3 minutes or until the cheese is melted. Garnish with fresh chopped parsley.
Sweet Version: Place a slice of brie cheese on the prepared potato rounds. Top with an apple slice and sprinkled with a pumpkin pie spice and brown sugar mix. Broil for 3 minutes or until the cheese is melted. Garnish with chopped walnut.
Savory Version: Crumble fried bacon and finely chopped fresh rosemary over the prepared potato rounds. Top with a slice of red onion. Broil for 3 minutes.
