Cornbread Stuffed Chicken Breast

A perfectly roasted chicken breast stuffed with a homemade cornbread stuffing, fresh herbs, and a delectable bourbon glaze.

I haven’t made this dish for some time, but I knew when I was asked to come up with some recipes that used bourbon I had to include this wonderful bourbon glaze. A delicious glaze that turns simple chicken into an elegant dish great for entertaining. The chicken is tender, the juices drip through the stuffing adding another dimension to the stuffing and the glaze…OMG! The glaze gives it deep rich tones. Beware your eyes might roll back in your head as you savor every bite. YUM!

In a large skillet fry 1-pound country sausage using a wooden spoon to break apart the meat into crumbles until no longer pink, about 5 minutes. Drain any fat and return to skillet. Mix in two cups of cornbread stuffing to the sausage. Use leftover homemade stuffing or a packaged version.

Salt and pepper 4 chicken breast.

Cut a slice down the side of each chicken breast creating a pocket. Fill with a 1/2 cup stuffing mixture.

Place in a baking pan and bake in a 350°F. for 20 – 30 minutes, or until the juices run clear when pierced with a fork. Meanwhile, make the glaze. In a medium pan simmer 2 cups chicken stock and 1/4 cup bourbon chicken stock until reduced to a deep rich glaze.

Remove the chicken from the oven and drizzle the glaze over the top.

Serve with extra cornbread stuffing and a green vegetable.

Ingredients
  • 1 pound country sausage
  • 4 skinless chicken breasts
  • 2 cups corn-bread stuffing
  • 2 cups chicken stock
  • 1/4 cup bourbon
Instructions
  1. Preheat oven to 350°F.
  2. Fry the sausage in a large skillet until no longer pink, about 5 minutes. Drain excess fat.
  3. Mix the sausage and stuffing together.
  4. Cut a slice down the side of each chicken breast creating a pocket. Fill each slit with about a 1/2 cup stuffing mixture.
  5. Place in a baking pan and bake for 20 - 30 minutes, or until the juices run clear when pierce with a fork.
  6. Meanwhile, make the glaze. In a medium pan simmer the chicken stock until reduced by half. Add the bourbon and simmer for 2 additional minutes.
  7. Transfer the chicken to serving plates and drizzle with glaze.
