Watermelon Feta Salad

I know not everyone is a fan of fruit in their salad, but if you are this is a fresh summer salad with a unique twist: Watermelon Feta Salad. The watermelon and candied pecans give it a touch of sweet while the radishes and dressing serve up a pinch of heat.


Chop two cups of lettuce. I have arugula, kale, and spinach in the garden, so I am using a mix of all three. Remove stems, tear into bite-size pieces, wash, and spin dry the greens.


Thinly slice two – three radishes pulled fresh from the garden.


Cube a half a cup ow watermelon. Remove all seeds.


In a bowl layer the lettuce, radishes, and watermelon.


Top with a fourth a cup of feta cheese and a handful of candied pecan pieces.


Serve with a homemade balsamic vinaigrette and enjoy! – Ella
