I read somewhere once that truffles are the diamond of the culinary world. It’s just a mushroom so what’s the big deal? Well, a diamond is just a rock and it’s a pretty big deal.
Like diamonds, truffles can be hard to find. They have an intense aroma and a rich nutty, somewhat earthy taste. An easy way to see what a truffle tastes like is to try this recipe for Truffle Thyme Tater Tots using truffle oil.
Something to keep in mind, truffle oil is cubic zirconia meaning most “truffle” oil is olive oil which has been artificially flavored to mimic the taste of truffles. It still gives you that great truffle taste and enhances the flavor of food but, read your label to see if there is any truffle, shavings or otherwise, in the oil before plunking down a lot of cash.
Spread tater tots on a foil-lined baking sheet. Do not overcrowd.
Season with sea salt, fresh thyme, and drizzle with truffle oil. For fries and tater tots, I prefer the milder white truffle oil to the black which is a heartier, muskier, taste. Toss to coat.
Bake according to package directions.

Truffle Thyme Parmesan Tater Tots
• 1 (10 ounces) bag of tater tots
• Sea salt, to taste
• 2 tablespoons fresh thyme
• 1 tablespoons truffle oil
- Bake tater tots according to package directions. Season with sea salt and thyme. Drizzle with truffle oil and toss to coat. Serve immediately.
