If you, like me, always seem to be running late in the morning here is a quick and easy breakfast that will fill you up on fiber and load you up with vitamins ready to conquer the hectic busy day ahead.
Mash an avocado with the juice of half a lime. Stir in two tablespoons chopped cilantro, and salt and pepper to taste. Spread on a piece of toasted multigrain bread. Sprinkle with red pepper flakes.
Serve with strawberry relish. Dice up some strawberries, squeeze the juice of half a lemon and half a lime over strawberries.
Sprinkle sugar, fresh mint, and a dash of ginger ale over berries and gently stir. Let sit for 15 minutes to allow sugar to dissolve and flavors blend. Serve with toast and enjoy!
1 pound fresh strawberries, diced
Juice of half a lemon
Juice of half a lime
2 tablespoons sugar
Splash of ginger ale
1 tablespoon fresh mint, chopped
Toss together and refrigerate for 30 or more minutes to blend flavors.
