The mildness of walnuts mixed with the tanginess of cranberries and the robust taste of gorgonzola cheese on a bed of mixed greens makes this salad an all-time favorite of mine. The gorgonzola dressing is so delicious!
When making the dressing mash the Gorgonzola into a paste. Do not substitute another milk for the buttermilk or the dressing will be too thin and runny.
Place mixed greens in a salad bowl, or plate. Add cucumber slices, shredded carrots, crumbled gorgonzola cheese. Include dried cranberries and chopped walnuts.
Serve with gorgonzola dressing on the side. So tasty you won’t even mind that it’s good for you. – Ella

1/4 pound mashed gorgonzola
1/2 cup mayonnaise
1 cup buttermilk
1/4 teaspoon salt
1/4 teaspoon pepper
Mix gorgonzola and mayonnaise. Stir buttermilk into mixture slowly. Salt and pepper to taste.
