Feta Apple Salad

Using one apple, Fuji or a crisp apple, slice the apple and lightly brush slices with walnut oil. Grill. Remove to a plate and let cool slightly.

In a large salad bowl, add Arugula.

Add Grilled Apple Slices

Sprinkle with feta cheese and candied pecans

Serve with vanilla bean vinaigrette on the side.

Vanilla Bean Vinaigrette

• 1 vanilla bean, split lengthwise and seeds scraped
• ¾ cup extra-virgin olive oil
• 4 tablespoons white wine vinegar
• 1 tablespoon hot water
• 1 ½ tablespoons honey
• ½ teaspoon dried tarragon
• Freshly ground salt and pepper, to taste


  1. Place ingredients in a food processor, or blender. Pulse until smooth.
