Savory Bacon Waffles

When you think waffles do you think Belgian? I think German, as in my Oma, who would serve us waffles on the Sunday mornings we stayed with her.  What I love about waffles is they are airier than a pancake. You can stuff them, stack them between layers of fruit, drizzle them with chocolate, even pour country gravy over them and eat them topped with fried chicken. Come on that’s good stuff.

Do I sound a little obsessed with waffles? I am! Today is going to be a long day on the farm. We are adding a chicken coop this Spring and need to get the barn ready beforehand and believe me it needs much love before this can happen. I wanted a heartier breakfast to help pump me up for the physical workout I was about to take on and knew my Oma’s waffles would do the trick.

Savory Waffles 1-1

I was not, however, feeling sweet this morning (I’m rarely sweet in the mornings 😉). So, I decided to serve savory bacon waffles instead.

What you will need:

Flour, baking powder, salt sugar eggs vegetable oil, milk, sage, chives, black pepper cheddar cheese and bacon cooked crisp. I like to use 2 strips of bacon because I do not want the bacon flavor to overpower the savory goodness of the sage and chives.

The Steps:

Stick with the adage: mix the dry ingredients in a large bowl. Then whisk in the wet, egg and oil, in a separate bowl until frothy.

Add the egg mixture to the flour mixture and gradually stir in the milk whisking the waffle mix until smooth.

Stir in the sage, chives, crumbled bacon, and the cheese. Pour batter onto lightly greased preheated waffle iron.  Cook waffles 3-4 minutes until golden brown.

Savory Bacon Waffles

Ingredients

  • 2 cups flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • ¼ cup sugar
  • 2 eggs
  • ½ cup vegetable oil
  • 2 cups milk
  • 1 tbsp. sage, finely chopped
  • 1 tbsp. chives, finely chopped
  • ½ tsp. black pepper
  • ½ cup sharp cheddar cheese, shredded
  •  
  • Bacon, crisp-cooked

Directions

  1. Oil and preheat the waffle iron.
  2. Sift the dry ingredients together in a large bowl.
  3. In a separate bowl, lightly beat the eggs adding in the oil and whisking to a froth.
  4. Add the egg mixture to the flour and gradually stir in the milk. Whisk the waffle mix until smooth.
  5. Stir in the spices, crumbled bacon, and the cheese.
  6. Pour batter onto lightly greased preheated waffle iron. Cook waffles 3-4 minutes until golden brown. Serve with bacon.
