Nestled Eggs

Here is a healthy version of “Bird’s Nest” that eliminates the oil and uses sweet potatoes spirals insteady of hash browns. Healthy and yummy!

Fill a medium pan half full of water and bring to boil. Add sweet potatoes bringing water back to a boil. Reduce heat to medium-high and cook the potatoes until they are softened, 5 – 7 minutes. The potatoes should be softened enough to work with to create a well, but not cooked through. They will continue to cook in the oven.

Drain potatoes. Place in a medium bowl and salt and pepper to taste.

Divide between two ramekins. Make a well in the center of potatoes and crack an egg in the well.

Salt and pepper egg if desired. Drizzle the heavy cream evenly over each egg to prevent the egg from drying out.

Place ramekins on a baking sheet and bake for 15 – 22 minutes. My husband and I have different tastes when it comes to how long to cook our foods. I prefer a more solid yolk whereas the hubby likes it a little runny. You can adjust to everyone’s taste by watching the eggs during the baking process and remove them from the oven accordingly.

• 2 cup sweet potatoes spirals
• 2 eggs
• Salt & Pepper to taste
• 1 tbsp. heavy cream

Directions


1. Preheat oven to 375°.
2. Fill a medium pan half full of water and bring to boil. Add sweet potatoes bringing water back to a boil. Reduce heat to medium-high and cook the potatoes until they are softened, 3 – 5 minutes.
3. Drain potatoes. Place in a medium bowl and salt and pepper to taste. Divide between two ramekins.
4. Make a well in the center of potatoes and crack an egg in the well. Salt and pepper egg if desired.
5. Drizzle the heavy cream evenly over each egg to prevent the egg from drying out.
6. Place ramekins on a baking sheet and bake for 15 – 22 minutes.
